• 6 fresh egg whites beaten into peaks*
  • 120g rice flour
  • 1 tablespoon Maple syrup
  • Pinch of Pink Salt
  • ½ tsp baking powder
  • 150g shredded coconut


Preheat fan forced oven to 180 degrees

Line 25cm long loaf tin with grease proof paper

Beat the egg whites into peaks

Add the remaining ingredients to eggs whites and combine well

Pour mixture into loaf tin

Bake for 30 minutes or until inside is baked and top should be golden brown. (Insert a skewer, if clean when remove cake is cooked)

Remove cake from tin and leave to stand on cooling rack for 10 minutes before serving

* Place the egg whites in a clean bowl and beat with electric beater until they are nice and firm. Eggs whites should be white in colour and will hold firmness when touched.
